FETTUCCINE ALFREDO 
4 c. fettucini noodles
1 egg yolk
1 c. heavy cream
1/2 c. butter
1/2 c. grated Parmesan cheese
Pepper to taste

Cook noodles as directed on package. Drain well. Beat egg yolk with cream. Melt butter. Pour butter over noodles and toss. Add egg yolk and cream mixture and toss. Add Parmesan cheese and pepper and toss. Serve immediately. Serves 6-8.

VARIATION: To reduce fat and lower cholesterol you can omit egg yolk, use skim milk instead of heavy cream and reduce butter to 1/4 cup.
