SESAME STEAK
1 1/2 lb. flank steak
3 tbsp. sesame seeds
1 1/2 tbsp. sesame oil
1 1/2 tbsp. sugar
1 clove garlic, finely minced
Freshly ground pepper to taste
1 scallion, trimmed and chopped

Place the steak on a flat surface and, using a sharp knife, cut it on the bias into very thin slices. Cut the slices into one inch cubes. Put the meat into a mixing bowl. Spoon the seeds onto a baking dish and broil, stirring often, until nicely browned. Remove and let cool. Add the sesame seeds to the meat. Add the remaining ingredients and let stand one hour. Preheat broiler. Arrange the meat in one layer in a baking dish and broil about four inches from the source of heat. It is not necessary to turn the pieces. Broil until done. Yield: 4 to 6 servings.
