RHUBARB CAKE | |
1 1/2 c. brown sugar, packed 1/2 c. butter 1 c. sour milk or 1 c. milk with 1 tbsp. lemon juice or vinegar 1 egg 2 c. flour 1 tsp. baking soda 1/4 tsp. salt 1 tsp. vanilla 2 c. finely chopped rhubarb 1/4 c. white sugar 1 tsp. cinnamon Cream brown sugar and butter well. Add sour milk and egg and blend well. Then slowly add flour sifted with soda and salt. Beat until smooth and add vanilla and rhubarb. Pour into a greased and floured 9x13 inch pan and sprinkle with a mixture of 1/4 cup white sugar and 1 teaspoon cinnamon. Bake 40 minutes at 350 degrees. Serves 10-12. |
