CORN FRITTERS 
1 c. fresh corn, about 3 ears
1 egg, separated
1/4 c. flour, plain or self-rising
1/2 tsp. salt
1/4 c. flour
1/2 tsp. baking powder
1 tsp. sugar

Cut the corn off about 3 ears, heaping cup O.K. Split grain before cutting off ear. Scrape off ear for pulp. Mix all ingredients well except egg white that has been beaten until stiff, fold in and mix carefully by hand. Drop by spoonful in deep fat and cook until brown.
