DOC WILSON'S BAKED BEANS | |
4 c. beans 2 tsp. salt 1 tsp. dry mustard 1/2 tsp. ginger 1/4 c. molasses 1/4 c. brown sugar 1/4 to 1/2 c. maple syrup 1 onion, peeled 1/2 lb. salt pork Pick over and rinse beans. Soak overnight. Drain. Cover with water, bring to boil and simmer 1 1/2 hours, slowly, until beans split when taken up with spoon and blown upon. Drain and put in bean pot. Stir together salt, mustard, ginger, molasses, brown sugar and maple syrup with boiling water and pour over beans. Push onion into center. Cut salt pork away from rind and cut into cubes. Put on top of beans and cover beans with water. Cover pot and bake at 250 degrees for 8 hours. |
