CREAMED EGGS 
1 doz. hard boiled eggs
1/2 sm. onion, diced
1 can cream of chicken soup
1/2 can milk
2 tbsp. butter
1 (4 oz.) can mushrooms
1 c. each Cheddar & Monterey Jack cheese, shredded
Sausage, bacon or ham, approx. 1 lb. cooked & crumbled

1. Saute onion in butter.

2. Add cooked meat, soup and milk.

3. Cook until mixture begins to boil.

4. Season with salt and pepper.

5. Put half of mixture in shallow baking dish (9 x 13 inch works well).

6. Spread half of cheese mixture over that.

7. Quarter eggs and place on top.

8. Add remaining meat/soup mixture.

9. Spread remaining cheese. Can be made ahead and refrigerated. Bake at 350 degrees for 30-40 minutes. Serves 6-8.
