SWEET AND SOUR SMOKED SAUSAGE | |
1 green pepper, sliced 1 med. onion, sliced 3 small tomatoes, sliced 1 lb. smoke sausage, 1/2 inch slices 1 tbsp. butter 1 tbsp. cornstarch 1/2 tsp. ginger 1 tbsp. vinegar 1 tbsp. soy sauce 1/2 c. apricot preserves 1 can pineapple tidbits In butter saute sausage, onion, pepper and tomatoes until heated. In a separate bowl mix cornstarch, vinegar, ginger, soy sauce and apricot preserves; mix well. Pour into saute mixture until sauce is thick. Simmer 15 minutes. For last 2 minutes pour in pineapple tidbits and continue cooking until heated. Serves 4 to 6. |
