HOLIDAY APPLE BREAD 
1/4 c. shortening
2/3 c. sugar
2 beaten eggs
2 c. grated or finely chopped raw apples
2 c. sifted flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tbsp. grated lemon rind
2/3 c. chopped walnuts

Cream shortening and sugar until fluffy. Add beaten eggs and beat well. Add to first mixture the apples and lemon rind, alternately with sifted dry ingredients. Add nuts. Bake at 350 degrees for 50 to 60 minutes.
