HURRICANE APPLE BREAD 
1/2 c. butter
1 c. sugar
1 egg, beaten
2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 c. milk
1 1/2 to 2 c. apples, peeled and diced
1/4 c. chopped walnuts
1/2 c. raisins

Beat butter and sugar to a creamy consistency. Add egg and beat well. Sift together dry ingredients and add to butter-egg mix, alternately with the milk. Fold in apples, nuts, and raisins. Pour into two smaller pans or one large pan. Sprinkle top with sugar. Bake at 350 degrees for 50-60 minutes. Test with toothpick. Cool 10 minute, loosen and remove to rack to cool completely. Slices best next day.
