ITALIAN SAUSAGE WITH STEWED
PEPPER
 
6 or 7 Italian sausage links
1/8 c. olive or vegetable oil
2/3 c. chopped onion
2 tbsp. chopped parsley
6 oz. red wine

PEPPERONATA:

1/4 c. olive or vegetable oil
2 onions, sliced
3-4 green pepper strips
3 lg. tomatoes, cut in strips
1 tsp. black pepper
1 1/2 tsp. salt
Sprinkle of basil

Heat oil in skillet over medium heat. Brown sausage in oil. Add onions, parsley and wine. Simmer until wine is reduced to 1/3.

Pepperonata: Heat oil in large skillet. Add onions - cook 30 seconds. Add peppers - cook 10 minutes, stirring often. Add tomatoes and seasonings. Simmer 15 minutes, stirring often. Pour onto heated platter. Top with sausages and sauce.

This is good anytime, but makes a good summer meal served with garlic bread and corn on the cob.
