LOS TAOS SALAD 
1 1/2 c. chopped onion
1 tsp. paprika
2 tbsp. butter
2 tsp. salt
15 oz. can chili beans, undrained
6 c. chopped lettuce
6 oz. bag corn chips
1 lb. ground beef
1/4 tsp. cumin
2 tbsp. chili powder
1 tsp. crushed oregano leaves
4 med. tomatoes, chopped
1 c. green pepper, chopped

Saute onions in butter. Add ground beef; season with chili powder. Add paprika, salt, cumin, oregano and chili beans. Simmer to blend flavors. Skim grease. Toss with lettuce, tomatoes, peppers and corn chips.

DRESSING:

1 egg, hard boiled
1 tbsp. pimento, finely chopped
2 tbsp. green pepper, chopped fine
1 tbsp. onion, chopped fine
1/4 c. chili sauce
1 c. mayonnaise

Mince hard cooked egg until fine. Add mayonnaise, chili sauce, green pepper, pimento and chopped onions. Beat well. Chill.
