COTTAGE CHEESE QUICHE 
Preparation time: 30 minutes. Oven temperature: 450 degrees and 350 degrees. Baking time: 30 to 35 minutes.

This puffy, golden quiche would be a good choice for a wholesome and appealing lunch. Accompany it with a leafy salad or sliced tomatoes. Serve fresh fruit for dessert.

For 1 quiche, 6 servings, you will need:

2 c. cottage cheese
4 eggs
1/2 c. milk
1 tsp. paprika
3/4 tsp. salt
1/8 tsp. white pepper
Flaky Pastry (recipe follows)
1 1/2 c. shredded Monterey Jack cheese
1/2 tsp. caraway seeds (optional)

1. In blender or food processor combine cottage cheese, eggs, milk, paprika, salt, and white pepper.

2. Line a 10 inch quiche dish with pastry, trimming edge flush with top of dish. Sprinkle bottom evenly with Jack cheese and caraway seeds. Pour in cottage cheese mixture.

3. Bake at 450 degrees on lowest rack of oven for 10 minutes. Reduce heat to 350 degrees. Continue baking until top is golden brown and a knife inserted near center comes out clean, 20 to 25 minutes. Let stand 5 to 10 minutes before cutting into wedges to serve.

FLAKY PASTRY:

Mix 1 1/4 cups unsalted all-purpose flour and 1/4 teaspoon salt. Cut in 1/4 cup firm butter and 2 tablespoons lard until mixture forms coarse crumbs. Beat 1 egg slightly. Add to flour mixture. Stir with a fork until pastry begins to cling together. Shape into a smooth ball. Roll out on floured surface to a circle, 12 to 13 inches in diameter.

Tips: If you wish, this quiche can also be served as an appetizer. Cut into thinner wedges.
