QUICK LEMON CHEESECAKE 
1 (8 oz.) pkg. cream cheese, softened
1 1/2 c. milk
1 (3 3/4 oz.) pkg. instant lemon pudding
Grated peel of one lemon
8 inch graham cracker or gingersnap crumb crust
Sliced sweetened strawberries (optional)

In a large bowl mix cheese until fluffy. Gradually beat in 1/2 cup milk. Add remaining milk and pudding. Beat at low speed until smooth. Fold in lemon peel and pour into pie crust and chill until firm. Serve topped with strawberries if desired.
