ORANGE GLAZED PUMPKIN MUFFINS 
1 2/3 c. flour
1/2 c. sugar
1 tbsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 beaten egg
1/4 c. oil
1/2 c. canned pumpkin
2/3 c. undiluted evaporated milk
1/4 c. orange marmalade

Sift flour, sugar, baking powder, salt, cinnamon, and nutmeg into a medium bowl. Mix thoroughly. Mix egg, oil, and pumpkin together in a bowl. Add evaporated milk. Mix well. Make well in flour mixture. Pour pumpkin mixture into well. Stir just until dry ingredients are moistened. Spoon into 12 muffin cups. Place 1 level teaspoon of marmalade over top of each muffin. Bake at 400 degrees for 20 to 25 minutes. Remove from pan immediately. Cool before eating!
