CHICKEN CASSEROLE 
8 chicken breast halves, boiled & cut in pieces
1 c. mayonnaise
1 can cream of mushroom soup
2 1/2 c. instant rice
1 c. chopped celery
1/2 c. chopped onions
1 (8 oz.) can sliced water chestnuts
Salt & pepper to taste
1 stack Ritz crackers, finely crumbled
2-4 tbsp. butter

Combine first 8 ingredients and pour into 3 quart casserole. Melt butter and mix in crumbs. Sprinkle crumb mixture over casserole. Bake at 350 degrees for 45 minutes. Can prepared ahead and bake later. Freezes well. Serves 8.
