BREAD PUDDING | |
1 sm. loaf bread (white or wheat) 1 can heavy cream 1 c. whole milk 4 lg. eggs 2 c. sugar 2 tbsp. cinnamon 1/2 c. raisins (optional) 1 sm. can crushed pineapple without juice (optional) Break bread into small pieces and place in a large glass baking dish. Combine other ingredients and add to bread. Mix well. Add fruit, if desired. Bake at 350 to 375 degrees for approximately 30 to 40 minutes or until golden brown and rising like a cake in the middle. Spread meringue over top and brown lightly as directed. MERINGUE: Save egg whites from the 4 eggs above. Whip into fluffy meringue, adding sugar to sweeten. Spread over bread pudding mixture which has been cooked. Heat in oven at 350 degrees or until golden brown on top. Remove immediately. |
