PEACH BREAD PUDDING 
4 c. stale white bread
1/2 c. sugar
1/4 tsp. salt
1/4 tsp. cinnamon
2 egg whites
6 peach halves
2 1/2 c. milk
2 egg yolks
2 tbsp. butter
1/4 tsp. nutmeg
Juice of 1 lemon
Lemon rind, grated

Cut bread into bite-size cubes. Combine milk and bread. Add beaten egg yolks with the sugar, salt, nutmeg, cinnamon and lemon juice. Pour into a greased deep baking dish. Set baking dish in another pan that can hold 2 inches of hot water. Bake at 350 degrees for 45 minutes or until center is set.

Beat egg whites and spread over pudding. Place peach halves on top and add a dab of jelly in the center of each peach. Return to oven and bake 15-20 minutes longer or until egg whites brown.
