SPANISH COFFEE CAKE 
1 tsp. cinnamon
2 1/2 c. sifted flour
1 c. brown sugar
3/4 c. sugar
3/4 c. oil
1/2 c. nuts

Mix by hand take out 3/4 cup of mixture and add 1 tea- spoon cinnamon and 1/2 cup nuts. Add:

1 c. buttermilk
1 whole egg
1 tsp. baking soda
1 tsp. baking powder

Grease and sprinkle flour on bottom of pan or line with wax paper. Pour batter on large pan 10 x 10 or larger and sprinkle the topping over batter and bake at 350 degrees for 45 minutes.

Can do ahead. Serves 6 to 12.
