SPANISH COFFEE CAKE 
2 1/2 c. flour
1 c. brown sugar
1/2 tsp. salt
3/4 c. white sugar
1 tsp. cinnamon
3/4 c. oil

Mix above ingredients together and remove 1 cup of mixture to use for topping. (Add 1/3 cup chopped nuts to topping.) Add remaining ingredients to mixture:

1 tsp. baking soda
1 tsp. baking powder
1 c. buttermilk
1 egg

Beat at medium speed 2 minutes. Pour into 9 x 13 inch well greased pan. Sprinkle with topping. Bake at 350 degrees for 30 minutes.

To make buttermilk mix 1 cup milk with 1 tablespoon vinegar or lemon juice... let stand 15 minutes.
