SOUTHERN CORNBREAD DRESSING 
4 c. crumbled cornbread
2 c. dry bread crumbs
3 1/2 c. chicken stock
3 eggs
1 c. milk
2 tsp. salt
1/2 tsp. black pepper
1 c. chopped celery
1 c. chopped onion
1 tsp. poultry seasoning or sage

Mix cornbread and bread crumbs with the stock. Beat eggs slightly, add milk, salt and pepper. Add to bread mixture. Then add celery, onion and seasoning. Mix well. Bake in well greased pan at 375 degrees for 30 to 40 minutes. Makes about 8 cups.

My Mom made many big pans of cornbread dressing/stuffing along with some leftover biscuits, always added onions, sage, etc. It really is best that way... IMO, at least. lol

Close but not quite.

- Use white sandwich bread, not bread crumbs in equal parts to the cornbread.
- No milk, chicken stock.
- Saute' the onion and celery in butter prior to adding to the bread mixture.
- Do not use sage! Poultry seasoning, salt and pepper.
- The mixture should be soupy when transfered to the baking dish. Cook until it sets up well and is golden brown.

Yep, You need SAGE or it isn't Dressing !! Yes saute' the celery and onions and add to cornbread mixture.

Poultry seasoning for sure... no milk. BTW... Phillip, you do know there is sage in Poultry Seasoning, right?
