RED CABBAGE 
1 red cabbage, quartered and cored
1 green apple, finely chopped
1 medium onion, finely chopped
2 tbsp. butter
1/2 c. red wine or water

Marinade:

1/2 c. red wine vinegar
1/2 tsp. cinnamon
1/4 tsp. ground nutmeg
2 tsp. salt
1/3 c. sugar
1/2 tsp. ground cloves
2 bay leaves
1/2 tsp. white pepper

Slice or shred cabbage very, very thin. Chop finely apple and onion and sauté in 2 tablespoons butter until tender. Add cabbage and marinade. Add red wine or water. Simmer 45 minutes to an hour or until tender.
