CARROT TIMBALES | |
3 c. grated raw carrots 3/4 c. matzo meal 2 eggs, slightly beaten 2 tbsp. melted butter 1/4 c. minced onion 1 tsp. salt 2 tsp. minced parsley 1 (10 1/2 oz.) can clear chicken broth Grease muffin tins. Combine all ingredients and mix well. Fill greased muffin cups 2/3 full. Bake in 325 degree oven 45 minutes or until firm. Loosen edges with knife and unmold. Serve hot. Yield: 6. |
