CRANBERRY CHICKEN 
2 whole boneless chicken breast
1/3 c. soy sauce
1/2 c. brown sugar
1 can cranberries, whole with sauce
1 c. ketchup
1/4 tsp. grated orange peel
1 sm. onion, chopped
2 tbsp. oil
2 tbsp. lemon juice

Place chicken breast in baking dish and bake in 350 degree oven for 15 minutes. While chicken is baking, saute onion in oil in a saucepan until clear. Add lemon juice, sugar, soy sauce, ketchup, grated orange peel and cranberries. Stir well and bring to a boil. Simmer. Pour on top of partially cooked chicken and bake for 20 minutes. Serves 4.
