JACK SOUFFLE 
1 lb. Monterey Jack cheese
1 pkg. frozen chopped spinach
1/2 c. cottage cheese (farmer style)

Heat oven to 350°F. Use loaf pan. Slice Jack cheese and layer bottom of pan with 1/2 of Jack cheese. Add 1/2 of spinach to cheese, add cottage cheese then rest of spinach. Add remaining Jack cheese slices on top.

Bake in oven 30 to 45 minutes or until golden brown.

Serve hot or cold.
