PEPPERY CHICKEN 
8 skinned chicken breast halves
2 tbsp. olive oil
2 tbsp. soy sauce
2 tbsp. honey
1/2 tsp. thyme
1/2 tsp. paprika
1/2 tsp. cayenne pepper
1 tbsp. white vinegar
1/2 tsp. allspice
1 tsp. freshly ground pepper
2 cups sliced mushrooms

Combine olive oil, soy sauce, honey, thyme, paprika, cayenne pepper, vinegar, allspice, and pepper. Pour over chicken. Marinate in refrigerator for about 1 hour.

Bake chicken at 375°F for 30-45 minutes or until cooked through. Surround chicken with sliced mushrooms, spoon the sauce over them and bake 5 minutes more. Note: This recipe can also be grilled. Remove the breasts from the marinade and grill until cooked through, basting periodically with the marinade. Add mushrooms to the marinade and simmer for 5 minutes. Spoon over grilled chicken. Can also used skinned, chicken thighs for this recipe.
