DIJON-GARLIC PORK LOIN 
1 pork tenderloin
1 can mushrooms
1 lg. onion, diced
4 or 5 tbsp. Dijon mustard
Garlic salt
Black pepper
1 tbsp. chopped parsley
2 c. water

Lay pork loin on a greased rack in large roaster. Sprinkle with garlic and black pepper. Spread mustard over top. Sprinkle with parsley. Lay mushrooms and onions on top. Pour water around roast.

Cover and bake at 350 degrees approximately 2 hours or until tender. Remove lid and cook 20-30 minutes until brown.
