MINT MERINGUE DROPS 
2 egg whites
3/4 c. granulated sugar
Dash of salt
1 c. (6 oz.) mint chocolate chips OR Andes mint wafers
Green food coloring

Preheat oven to 375 degrees. Beat egg whites and salt until stiff. Add sugar, 2 tablespoons at a time, until very stiff. Add a few drops of green food coloring. Fold in mint chocolate chips or mint wafers, grated fine. (Blender or food processor works well.) Drop by teaspoonfuls on aluminum foil lined cookie sheets. Place cookies in oven, all at once. Turn off oven immediately. Let stand until done, overnight.
