BEEF DAUBE 
2 lb. round steak, cut in 2 inch cubes
1/2 c. flour mixed with 1 tsp. salt & a little pepper
4 strips bacon
1/2 c. each water & red wine
2 cloves garlic, mashed
3 lg. onions, sliced
6 peppercorns, bruised
6 cloves
1 bay leaf
4 carrots, sliced
1 tbsp. minced parsley
Salt

Dredge meat in flour. Cook bacon until crisp and break into small pieces in a large casserole. Brown meat in bacon fat and transfer to casserole. Add wine and water mixed to the skillet to clean out brown glaze and add to casserole. Add garlic and remaining ingredients, stir to mix well. Salt to taste. Bake covered in a 300 degree oven for 3 hours. Serves 6.
