CHICKEN ENCHILADA CASSEROLE 
1 onion, chopped
3 tbsp. butter
1 can cream of chicken soup
1 can cream of mushroom soup
1 c. chicken broth
1 sm. can chopped green chili
2 1/2 lbs. chicken, cooked, boned, and diced
1 pkg. tortillas
1 lb. Longhorn cheese, grated

Brown onions in butter. Combine onion with soups, broth, and green chili. Add chicken; mix well. Place layer of tortillas, layer of chicken mixture, and layer of grated cheese in casserole. Repeat layers until all ingredients are used. Bake at 350 degrees for 30 minutes.
