CITRUS BARBECUED CHICKEN 
1 lg. broiler-fryer chicken, quartered
2 limes, juiced
1 lemon, juiced
2 sm. oranges, juiced
2 lg. cloves, garlic, crushed
1 tsp. annatto seeds (optional)
1/2 tsp. oregano, crushed
1/2 tsp. ground cumin seeds
1/4 tsp. bottled hot pepper sauce
1 tsp. salt or to taste

Mix citrus juices and add enough water to make 1 cup liquid. Mix in remaining seasonings. Place chicken quarters in sturdy plastic bag and pour marinade over it. Close bag tightly and turn to coat all surfaces. Marinate for 14-24 hours. Place chicken on prepared grill, skin side down, or in oven under broiler. Baste and turn frequently until done, or until fork can be inserted with ease. Makes 4 servings.
