OZARK OATMEAL COOKIES 
1/2 c. shortening
1 1/4 c. sugar
2 eggs
1/3 c. honey
1 tsp. baking soda
1 tsp. salt
1 3/4 c. flour
2 c. oatmeal
1/2 c. coconut
1/2 c. raisins

Combine first 6 ingredients. Stir in flour and oatmeal. Add coconut and raisins. Chill. Shape into walnut-sized balls, roll in sugar and place on greased cookie sheet. Press lightly on each cookie with glass dipped in water. Bake at 325 degrees for approximately 8-10 minutes (don't over bake). Take off cookie sheet immediately. Good and chewy too!
