MORNING GLORY MUFFINS 
2 c. all-purpose flour
1 1/4 c. white sugar
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
2 c. grated carrots
1/2 c. raisins
1/2 c. nuts
1/2 c. coconut
1 apple, peeled, cored and grated
3 eggs
1 c. salad oil
2 tsp. vanilla

In a large bowl, mix flour, sugar, soda, cinnamon and salt. Stir in carrots, raisins, nuts, coconut and apples. In a bowl, beat the eggs, oil and vanilla. Stir into flour mixture until batter is just combined. Spoon into well-greased muffin cups, filling to the top. Bake at 350 degrees for 20 minutes. Makes about 14 large muffins.
