ITALIAN CHEESE-IT CASSEROLE 
FIRST LAYER:

1 lb. lean ground beef
1 tsp. salt
1/4 tsp. pepper
1 clove garlic, mashed

SECOND LAYER:

2 1/2 - 3 lb. summer squash, drained well
1 med. onion, chopped fine
1 pepper
2 tbsp. butter

THIRD LAYER:

1 c. shredded mild cheddar cheese

FOURTH LAYER:

2 eggs
2 c. cottage cheese
2 tsp. chopped parsley

FIFTH LAYER:

2 tbsp. grated Parmesan cheese, spread on top

Beat eggs thoroughly; fold in cottage cheese and parsley. Spoon over squash layer. Bake in preheated oven at 350 degrees for 35 to 45 minutes or until set. Makes 6 to 8 servings.
