POTATO-VEGETABLE PAPRIKASH | |
1 med. onion, sliced 1 tbsp. olive oil 1 c. cubed potatoes 2 med. ribs celery, sliced 1 pkg. frozen mixed vegetables 1 tsp. salt 1/2 tsp. paprika Dash freshly ground black pepper 1 tbsp. cornstarch In a medium heavy, non-stick skillet, cook onion in oil 5 minutes, stirring occasionally. Add potatoes and celery and cook 5 minutes more. Stir in mixed vegetables, salt, paprika and pepper. Cover and cook 20 minutes, occasionally stirring, and separate frozen vegetables. In a cup, mix cornstarch with 1/3 cup cold water. Gradually add to vegetable mixture and cook, stirring constantly, until thickened. Makes six 80 calories servings. |
