BEETS WITH ORANGE SAUCE 
1 tsp. butter
1/4 c. sugar
1 tsp. cornstarch
3/4 c. orange juice
Salt & pepper to taste
1/4-1/2 c. white vinegar
2 1/2 c. sliced or diced beets, drained

Melt butter. Mix in cornstarch and sugar. Blend 1 cup beets, orange juice and vinegar. Stir into butter mixture. Stir well and add seasoning. Stir in remaining beets and cook until thoroughly heated. Sprinkle top of beets with grated orange peel if desired.
