COTTON BELT RICE PUDDING WITH RAISINS | |
1 pt. raisins 3/4 pt. milk 1/3 c. sugar 4 eggs, separated 2 1/2 c. rice 4 apples, peeled and cooked soft Boil rice and milk together. Beat apples with sugar for 10 minutes to make sauce, add to rice. Set aside to cool. Whip egg whites until stiff. Carefully fold into pudding. Fold in raisins. Butter a mold, pour in pudding and place mold in pan filled halfway with boiling water. Steam 25 minutes. NOTE: Unless the rice is pre-cooked (which is not specified), this is insufficient milk. If using raw rice, at least 5 cups milk will be needed. |
