APPLE UPSIDE DOWN CAKE 
1/4 c. butter
1 lg. apple, peeled, cored, sliced
1 c. sugar
1/4 tsp. cinnamon
1 c. flour
1/4 c. nonfat dry milk
1 1/2 tsp. baking powder
1/2 tsp. salt
1/4 c. butter, softened
1/2 c. water
1 egg
1 tsp. vanilla extract

In skillet, over medium heat, melt the butter; add apple; sprinkle on 1/2 cup sugar and 1/4 teaspoon cinnamon. Cook slowly stirring occasionally for 12-15 minutes, until apple is soft. Spoon apple and liquid into the bottom of an ungreased 8 inch square cake pan, with apples in a single layer.

Preheat oven to 350 degrees. Combine flour, salt, sugar, powdered milk, baking powder in a medium bowl. Add softened butter and water. Beat with electric mixer until well blended.

Add egg and vanilla. Beat 2 minutes. Pour batter over apples. Bake 30-35 minutes or until golden. Remove from oven and let set 1 minute. Invert onto plate. Serve warm. Makes approximately 8 servings.
