SHRIMP GUMBO 
2 c. sliced okra
1/3 c. fat or bacon drippings
2/3 c. chopped green onions and tops
3 cloves garlic, finely chopped
1 1/2 tsp. salt
1 tsp. black pepper
2 lbs. shrimp or less
2 c. hot water
2 whole bay leaves
1 c. stewed tomatoes
6 drops hot pepper sauce
1 c. rice, uncooked, cook as directed on package

Saute okra in fat 10 minutes. Add onion, garlic, shrimp, salt and pepper. Cook 5 minutes. Add water, tomatoes and bay leaves. Cover and simmer 20 minutes. Remove bay leaves and add hot sauce. Spoon over cooked rice.
