EASY APPLESAUCE CAKE 
1/2 cup vegetable oil
3/4 cup sugar (we use less)
1 cup unsweetened applesauce
1 egg
1 tsp. baking soda
1 tsp. baking powder
1 1/2 tsp. cinnamon
1 tsp. vanilla
2 cups all-purpose flour
3/4 cup raisins
1/2 cup chopped nuts

Mix all ingredients together one after another except the raisins and nuts. Fold in raisins and nuts and mix by hand or electric beater for 1 or 2 minutes. Grease and flour 9x9-inch pan and bake at 325°F for 1 hour.

Variation: For a change pumpkin can be substituted for applesauce.

This recipe is very simple to put together. I baked it at 400°F but only for about 22 minutes. I also made it sugar free by replacing the sugar with Splenda, increased the applesauce to 1 1/4 cups, and changed the amount of baking soda to 1 1/2 teaspoons. Very good for a quick snack-type cake!
