CUBED STEAK PARMESAN 
1 egg
Dash pepper
1/4 c. finely crushed saltine crackers (6 or 7 crackers)
1/4 c. grated Parmesan cheese
5 beef cubed steaks
2 tbsp. cooking oil
1 (8 oz.) can pizza sauce

Beat together egg, pepper, and 1 tablespoon water. Combine crumbs and 2 tablespoons of the cheese. Dip steaks in egg mixture, then on crumbs. In skillet brown the steaks in hot oil. Drain off fat. Pour in pizza sauce. Cover. Reduce heat. Simmer 20 minutes, adding a little water if necessary, to keep the sauce from sticking. Sprinkle with the remaining cheese.
