EGGPLANT PRIMA VERA 
1 eggplant
Cracker crumbs (saltines)
2 eggs, whisked with dash of milk
Spaghetti sauce
Mozzarella cheese, shredded

Peel eggplant and slice into 1/4" round slices. Coat each slice with egg mixture and roll in cracker crumbs. Place into frying pan on low heat. Cook thoroughly, turning slices once. Place cooked slices into casserole dish and top with spaghetti sauce. Sprinkle shredded Mozzarella cheese over sauce. Bake at 275 degrees for 20 minutes or until sauce is bubbly and cheese melted.
