SALMON CROQUETTES 
1 beaten egg
1 lg. Irish potato, boiled
1/2 c. green or white onions
1 can salmon and juice
15 white crackers, crumbled
Salt to taste
Pepper

Remove bones from salmon. Drain water off potato. Mix all ingredients including juice from salmon. Press small amount of mixture into ball shape then flatten on wax paper covered with flour. Shape into size of hamburger patties. Heat skillet and about 1 cup cooking oil place patties in skillet, turning occasionally cook until golden brown. You may need to add more oil during cooking.
