TAHITIAN CHICKEN | |
5 chicken breasts or steaks 1 sm. can frozen orange juice, thawed 1/3 c. dark soy sauce 3/4 tsp. ginger, freshly grated is the best 2 tbsp. curry powder (trust me on this, the orange juice will modify the result) 1 1/2 tsp. dry mustard 1/3 c. melted butter Melt butter and add additional ingredients. Stir slowly with whisk to separate the dry ingredients. Line appropriate size baking pan with foil and place chicken into pan. Add marinate and allow to rest in refrigerator for 4 hours. Remove from refrigerator while preheating oven to 400 degrees. Bake 45 minutes. Continue to baste the chicken with the sauce during the bake. The sauce can be ladled over rice as a side dish for presentation. Serving suggestion: steam fancy sliced carrots and present with chicken, rice, and top carrots with honey at serving. A while zinfindel makes an excellent companion with cheese, grapes, and apple slices for dessert. |
