TURKEY NOODLE CASSEROLE 
6 tbsp. butter
1/2 c. chopped onion
6 tbsp. flour
1 1/2 c. milk
1 1/2 c. turkey broth
1 1/2 c. shredded Swiss cheese
1/4 c. Parmesan cheese
4 oz. noodles
1 (10 oz.) pkg. broccoli
2 1/2 c. diced turkey

May substitute chicken and chicken broth.

Cook noodles, drain, set aside.

In same pot, cook broccoli, drain and set aside.

In same pot, melt butter, stir in onion. Cook until tender. Add flour, stir until smooth. Stir in milk, broth, salt and pepper to taste. Stir until thickened. Remove from heat, add 1 cup cheese and Parmesan. Stir until melted.

Pour 1 cup sauce in 11 x 7 x 2 inch dish. Lay in half noodles, all broccoli, then turkey. Top with remaining noodles and sauce. Sprinkle with 1/2 cup Swiss cheese, more Parmesan if desired. Bake uncovered at 350 degrees for 30 minutes.
