CORNMEAL BUTTERMILK PANCAKES 
1 1/2 c. yellow cornmeal
1/4 c. whole wheat flour
1 tsp. baking soda
1 tsp. salt
1 tbsp. honey or brown sugar
2 c. buttermilk
2 tbsp. melted butter
1 egg yolk
1 egg white, stiffly beaten

In medium mixing bowl sift the dry ingredients together. Add buttermilk, butter, and egg yolk. Blend. Fold in stiffly beaten egg white. Let sit while heating up the griddle so batter can thicken a bit. Put batter on hot griddle and cook until bubbly and bottom is golden brown. Serve with maple syrup. Makes about 16 medium sized pancakes.
