CHEESE PIE (LOW CALORIE RECIPE) 
2/3 c. cottage cheese
2 eggs
1 tsp. vanilla extract
1 1/2 tsp. sugar substitute
1 tsp. lemon juice
4 oz. evaporated skim milk

Beat cheese in blender until smooth, add sweetener, lemon juice, vanilla, and eggs. Beat well. Add milk and beat again. Pour into 8 inch pie pan. Bake at 325 degrees for 35 minutes.
