CHEESE BALL 
16 oz. Neufchatel cheese
8 1/2 oz. can crushed pineapple (natural juice)
1/2 c. chopped green pepper
2 tbsp. chopped sweet onion
1 tbsp. Beau Monde
1 c. chopped nuts

Mix all ingredients except nuts. Divide into two balls. Chill 30 minutes for easier handling. Roll in nuts.

Tip: Spray your hands with vegetable spray when you shape ball. This avoids the soft cheese sticking to your hands.
