SAUSAGE AND ITALIAN PEPPERS 
3 tbsp. olive or corn oil
3 oz. white wine
1 1/2 lb. Italian sweet sausage
1 lg. Spanish or 2 reg. onions, chopped
1 lb. peppers, green or red cut into pieces
Salt to taste
1/2 tsp. black pepper

Use skillet large enough for all ingredients. Place in olive oil, wine, and sausage; cover. On medium-low heat cook sausage 20 minutes turning often. Add onion and cook 5-6 minutes stirring often. Add peppers, salt, and pepper. Cover and cook 10 minutes, turning often. Remove cover, raise heat to medium and cook another 10 minutes. Remove and serve. Makes 4-6 servings.
