HEARTY WINTER VEGETABLE SOUP 
2 tbsp. olive or vegetable oil
1/2 c. sliced green onions
1/2 c. sliced celery
3 1/2 c. water
1 pkg. Lipton noodles and sauce (chicken flavor)
1 (10 oz.) pkg. frozen mixed vegetables, thawed
1 (14 1/2 oz.) can whole peeled tomatoes, undrained and coarsely chopped
1/4 tsp. thyme leaves
1 bay leaf
Salt and pepper to taste

In 3-quart saucepan, heat oil and cook green onions with celery over medium heat, stirring occasionally, until almost tender. Stir in water, noodles and chicken flavor sauce, vegetables, tomatoes, thyme and bay leaf. Bring to a boil, then simmer, stirring occasionally, 10 minutes or until vegetables are tender. Stir in salt and pepper. Remove bay leaf. Makes about 4 servings.

MICROWAVE DIRECTIONS: In 3-quart microwave-safe round casserole, microwave oil, green onions and celery, uncovered, at high (full power) 1 minute or until almost tender. Stir in water, noodles and chicken flavor sauce, vegetables, tomatoes, thyme and bay leaf. Microwave 17 minutes or until vegetables are tender, stirring once. Stir in salt and pepper. Remove bay leaf. Let stand covered 5 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
