CHEESY GRITS 
2 c. water
1 tbsp. butter
2 tbsp. picante sauce or chopped green chilies
3/4 c. processed Cheddar cheese, chopped
1/2 c. quick grits
1 egg, separated

Bring water to a boil in heavy saucepan. Stir in grits. Bring to a boil. Reduce heat, partially cover and cook 5 minutes, stir occasionally. Add cheese, butter and chilies. Stir until cheese is melted. Beat egg yolk with milk and stir into grits. Whip egg white until stiff and fold into mixture. Pour into 5x5 inch casserole dish sprayed with Pam and bake in a 350 degree oven for 1 hour. Let set 5 minutes before cutting.
